Easter Lunch

D + I love cooking special occasion meals –  Easter this year was no exception. 

So, D is not that into ham – I think because making it is pretty much idiot proof - turn oven on, place meat in oven, take meat out of oven, eat.  

He likes more of a challenge, and I can appreciate that.  But this year I talked him into a ham. (I haven’t had a traditional Easter meal in years – and I thought it sounded nice for our last Easter stateside for a while!)

Don’t worry he didn’t back down without a fight, this was all decided after his failed attempts to talk me into braising a rabbit for Easter.  Yes, you read that correctly, he wanted rabbit.  I’ll eat rabbit any other day, but dining on that dear bunny that brings me chocolate every year just felt wrong. Sigh... Maybe next year darling!   

So, despite our meal being rabbit-less, it was quite tasty… 


Roasted Beet Salad with Chèvre and Orange Vinaigrette
Brown Sugar Glazed Ham
Scalloped Potatoes à la Frank Stitt (my favorite chef!)
Bacon Brussels Sprouts
Glazed Carrots
Buttermilk Buscuits
Apple Cranberry Pie (I know not very Easter like, but we are trying to eat though the freezer, and the cranberries were left over from the holidays!)
